- 2 Tablespoon tablespoons red wine vinegar
- 2 Teaspoon hot sauce (optional)
- 1 clove garlic, minced
- 1 ripe avocado, pitted, peeled, and cubed
- 1 can black-eyed peas, rinsed
- 1 can corn, drained
- 2/3 Cup sliced green onions
- 1/3 Cup cup cilantro, chopped
- 1 Cup tomatoes, cubed salt and pepper, to taste
- 1/4 Cup olive oil
- MIX the vinegar, oil, hot sauce, and garlic together in a large bowl.
- ADD the remaining ingredients and mix. Let chill for one hour.
