Steps to Packing a Healthy Lunch

LunchAs our kids head back to school, we prepare them to make the most of classes and activities by investing in all the supplies, books, lessons, and sports gear they need to succeed.  It’s easy to forget that nutritious food is just as important as any other element of success in school.  Kids can’t reach their full potential without wholesome foods that fuel their minds and bodies.

The “junk-food” offerings in most school cafeterias have been well-documented by the media.  Parents looking to give their children foods that will set them up for success need to look beyond the cafeteria.  Homemade is healthier, but it doesn’t have to be time-consuming.  Being creative and with these simple tips make it easier than ever to give your kids the nutrition-rich foods their bodies need.

  • Get kids involved: bring your kids shopping and let them be a part of choosing what they’ll eat at lunchtime.  There’s no better way to teach them to make healthy choices, and you can plan meals for the whole week together.  At home, let them help prepare their lunch the night before so getting ready for school in the morning is less stressful.
  • Leftover Lunchmeat: Pre-made deli meats are expensive and high in sodium.  Make your own lunchmeat by slicing leftovers from dinner and keeping them ready-to-use in the fridge!

Classic Hummus

  • 1 16-ounce can of garbanzo beans, drained with ½ cup of the juice reserved.
  • 3 garlic cloves, chopped coarsely
  • ½ cup lemon juice
  • 4 teaspoons cumin seeds
  • Salt to taste

Place beans with 1/3 cup of the juice, garlic, lemon juice, cumin, hot sauce and parsley in a food processor, and chop. Add more juice if hummus is too thick. Do not overprocess, as mixture should have some texture.

Roasted Red Pepper Hummus

Add ½ cup of chopped roasted red peppers to the recipe above.  Try this zesty blend with our Sea Salt Baked Lentil Chips.

Herbed Hummus

Add 2/3 cup of your favorite herb (try parsley, basil, or cilantro) to the recipe above.  This hummus pairs perfectly with our Cucumber Dill Baked Lentil Chips.

Sundried Tomato Hummus

Helping our Kids Choose Healthy Snacks

Beat the Heat with Homemade Salsa!

Stay cool this summer with some juicy, fresh salsa and a bowlful of healthy chips from Mediterranean Snacks!

Avocado, Tomato, Mango Salsa

Avocado, Tomato, and Mango Salsa

  • 1 mango – peeled, seeded and diced
  • 1 avocado – peeled, pitted, and diced
  • 4 medium tomatoes, diced
  • 1 jalapeno pepper, seeded and minced
  • 1/2 cup chopped fresh cilantro
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped red onion
  • 3 tablespoons olive oil
  • In a medium bowl, combine the mango, avocado, tomatoes, jalapeno, cilantro, and garlic. Stir in the salt, lime juice, red onion, and olive oil. Refrigerate for about 30 minutes before serving.
