The Meat Eater’s Guide to Climate Change + Health recently published a study examining the carbon footprints of various protein-rich foods (view the whole chart below). Red meats such as beef and lamb land at the bottom of the chart, because their production results in high greenhouse gas emissions. Rising to the top of the chart are superfoods such as tofu, beans, milk, tomatoes, and in the #1 position, lentils!
Lentils are an ideal food choice, because they’re as healthy for you as they are for the earth! Lentils fuel the body with superfood nutrients like protein, fiber, iron, vitamin B1, and essential minerals for a healthy diet. Because of their low carbon footprint, lentils are a highly sustainable crop.
To lower your personal carbon footprint, consider eliminating meat from your dinner table just one night per week. Instead, let lentils provide your protein. They are delicious and easy to prepare with the many recipes available online. Start by checking out our recipe collection.
